Qabuli Pulao (sometimes spelled Kabuli) is the national dish of Afghanistan, and we make it the traditional way. Long-grain basmati is slow-steamed with caramelised onions, cumin, cardamom, and the rich stock from tender braised lamb shank. The rice grains stay separate, fluffy, and deeply fragrant.
What makes Qabuli unique is the topping — julienned carrots glazed in a touch of sugar and golden raisins, layered over the rice with the lamb. That sweet-savoury balance is the soul of Afghan cooking, and we pride ourselves on getting it just right.
